More oily fish for our brains in the cleansheets household last night and it was so quick and easy. It's another of the BIM postcards that I picked up in our local fish shop, the very friendly and helpful Quinlans on the Mall in Tralee.

For 4 people you will need 600g salmon fillet skinned and cut into cubes.
Marinade it for 10 minutes in 4 Tablespoons of Teriyaki sauce. (I had Kikkoman Teriyaki marinade and it was perfect for the job.)
Heat your frying pan and add the fish with the sauce. Cook on a moderate heat for 8-10 minutes turning as required.
I served it with Chinese egg noodles (they cook in 3 minutes!) and some new season local carrots. I steamed them and when they were almost cooked I melted some butter in a saucepan added some grated ginger (a peeled piece about half an inch long) and a dessertspoon of honey. Toss the carrots in the mixture and throw over some sesame seeds, (toasted if you've time). Empty plates all round!
The slowest part of cooking this dinner was peeling the carrots,from starting to cook to sitting down to eat was less than 30 minutes.
mmm,am dying to try this dish. Teriyaki anything is my favourite to order when eating out Japanese and it's so low in calories too!
