Recipe: Homemade Hummus

This recipe is posted especially for Kate - so she can spend her hummus budget on something more glamorous!

Early in June we attended a wedding, the groom is part of the Allen clan so it was a little bit different and the food was divine! Among the courses we had hummus and pesto with breads and olives - all very tasty but, the hummus... mmmmm I would have happily eaten a bowlful with a spoon. I managed to maintain my decorum and didn't, but came home determined to improve my own home made hummus. A few weeks later a friend of the bride and grooms gave me some pointers and I am happy to say they worked and I am quite happy with my new recipe.

Hummus is not consistent, the size and juiciness of the lemon and the size of the garlic cloves will obviously change but this is part of its charm.

I use two tins of chick peas as it's not worth making less, it's too delicious and keeps (covered) in the fridge. It's even tastier the next day. I haven't managed to make it with dried chickpeas yet as the advance planning seems to be beyond me but apparently that would make it even nicer. If you're more organised and manage it, please let me know how it goes.

You will need a food processor or at least a hand held blender, it may be possible to do it in a smoothie maker/liquidiser but I accept no responsibility if that doesn't work out.  

Ingredients:

2 cans of chick peas

2 cloves of garlic crushed or grated

2 tablespoons natural yogurt

Juice of one lemon

Teaspoon of Smoked Paprika (worth using the smoked type - this was one of the tips that made the difference!)

1 1/2 Tablespoons Tahini - you'll get this in a health food store if your supermarket doesn't stock it and it keeps for ages.

2 Tablespoons olive oil

Instructions:

Drain and rinse the chickpeas in a sieve or colander under the tap.

Put the spoon in hot water first if it's difficult to spoon the tahini out of the jar.

Put all the ingredients into the food processor and whizz it until it's a grainy puree consistency.

Try to resist eating it with a spoon.

Accompanied by roast vegetables and focaccia it went down really well in our house last week for a summery dinner al fresco.

The focaccia was made in the bread maker using the dough cycle and I also made bread sticks so the neglected gadget is back in favour.

If you're searching for lunch box variety - perhaps bread sticks and a little container of hummus  would be fun for a change.

My favorite thing to do is put it in the fridge so it's nice and chilled when I put it on. Perfect on mornings when I am a little on the "puffy" side (it happens), or on hot days or while I am on vacation in a tropical place. There is usually alot of the pitera left over so I either slather it on my arms and legs, or I re-use the mask again the next day by putting it back in the foil pouch and in a sealed sandwich bag and store it in the fridge. When I asked the sales lady about this method, she said that once you open the pouch, you lose some of the potency of the Pitera, but who knows. Could be a sales pitch to buy more than you need. I still get the same awesome results, so whatever works!
