My aunt in Wexford has to be given credit for this design. This is so simple and so effective, and kids love it, no trouble with them just eating the icing.
You will need :
1 litre block of vanilla ice cream (longer than the regular block)
A packet of midget gem sweets
A packet of giant chocolate buttons
A packet of Liqourice Allsorts
Dessicated Coconut
Green food colouring
Put a large plate or tray in your freezer, I do this first for two reasons the cold plate slows the melting while I'm assembling the cake and I don't end up with a cake on a plate/tray that won't fit in the freezer and the ensuing panic.
Put a cup full of dessicated coconut in a bowl add 2 teaspoons green food colouring and stir it through.
Open the sweet packets and clear an area to work, remove the plate and ice cream from the freezer and get to work quickly.
Scatter the green coconut on the plate, this is the grass for for the "trainscape."
Cut 5 slices of ice cream from the block, each about 1 1/2 inches. Arrange them on the plate in a circle.
Cut a further slice of icecream and half it into 2 squares one of these will form the "cab" of the engine.
Use the round allsorts for wheels, press them on to the sides of the engine and each carriage and when you run out, use buttons for the remaining wheels.
Press 4 square allsorts onto the engine cab as windows and a cylinder shaped allsort as the exhaust on the bonnet of the engine.
Sprinkle some midget gems on each carriage as the cargo.
Put it back in the freezer until candle time!
I bought the ingredients for €6.74, I had the dessicated coconut and green food colouring already and there was plenty of bribes for the children treats for me leftover.
I made 4 carriages as there was 4 children at the party but you could make extra carriages or halve the carriages and serve with jelly.
The adults had cupcakes and coffee (Rachel Allen's Lemon Cupcakes recipe) there was only one left out of 2 dozen so that tells it's own story! I made the icing a bit more spreadable than the last time I made them and they looked better, were easier to ice and even more lemony which is delicious with the buttery cup cakes.
