Spinach is one of those things that's so good for you it's hard to believe it's delicious as well. As a plain cooked vegetable its wilted mass is less than appetising but baby leaf spinach which is readily available makes a lovely addition to a green salad or filling for a sandwich.
We had spinach soup at the weekend but the recipe didn't require the entire 450g bag so the rest went into an omelette.
To use as an omelette filling simply put the leaves in a colander in the sink and pour over a kettle of boiling water, this is enough to cook it. Leave it to cool a little and then squeeze as much of the water out as possible. The volume will have decreased dramatically. Put the spinach on a chopping board and chop it finely.
Note: I allowed The Princess to help me with this (closely supervised) on the condition that she eat the spinach and it worked. I was delighted as we normally hear "I don't like leaves" as she picks them out with disdain, but apparently if she's been allowed to wield a large knife over them she does! Looks like I've found a 10th way to encourage adventurous eating.
Spread/sprinkle the chopped spinach on your omelette with grated cheese before folding it. That's all there is to it!
Make it taste even better: Add a pinch of grated or ground nutmeg to the eggs as you whisk them. Nutmeg, eggs, and spinach belong together.
