Hope you all enjoyed Hallowe'en. While I was laid up my mum carved a pumpkin with the Happy One and the Princess.
The pumpkin flesh was used for soup (Clodagh McKenna's recipe) and this delicious cake which resembles carrot cake.

The recipe is on the BBC Good Food Website and we would agree with many of the comments that the cooking time in the recipe is far too short!
